A simple and easy to make recipe for “Afternoon Tea”
Ingredients
• 1 stick unsalted butter room temperature
• 3/4 cup granulated sugar
• 1 large egg at room temperature
• 2 teaspoons pure vanilla extract
• 1 1/2 cup all-purpose flour
• 1/4 teaspoon salt
• 1/4 teaspoon baking soda
Whisk together the flour, salt and baking soda in a bowl. Set aside.
Preheat oven to 325 degrees.
In another bowl, add butter & sugar and mix together on high speed until creamy and fluffy. (about 3-4 minutes).
Mix on medium speed and add one egg and vanilla extract and beat until blended.
Mix on slow speed and slowly add in flour mixture.
Once dough is well mixed, place in refrigerator untill it is firm.
Line cookie sheet with parchment paper to avoid sticking.
Scoop out cookie dough to the size of the tablespoon and roll into a ball. Use your thumb to gently press and flatten into a 1/4 inch disc. Place on tray 1/2 inch apart.
Bake for about 10 minutes until golden brown on the edges. Remove from the oven.
Cool for 10 minutes and serve with your favorite pot of tea.
